Quantities for this recipe are rough and that is ok. I made it all up so you can play around too!
Take about a 1/4 small carrier bag of nettle tops (taken from noon flowering plants)
Wash
Add half of these to 500ml wine white vinegar (or other vinegar of your choice)
Leave for at least 24 hrs
Take the other half of nettles and gently simmer, in enough water to cover them, for 30 mins. Add sugar and stir. The quantity of sugar will depend on how sweet you want your balsmaic to be. So add the sugar, taste, let cool and taste again. Strain.
You can use brown sugar to give a more caramel taste.
After the vinegar has been sitting for the 24hrs it may have a slightly pink colour. Strain.
Add the two liquids together. If it is not sweet enough, you can gently heat and dissolve a little more sugar in.
Label your bolttle and store in cupboard. It should be good for at least 6 months.
